Layered the night before. Gone by morning.
This is one of those recipes that crosses the line between breakfast and dessert and decides it belongs to both. A cup of cold ricotta or rich greek yogurt, berries macerated briefly with orange blossom honey, layered together in whatever glass you have and left in the fridge overnight to settle into each other.

Layered the night before. Gone by morning.
Ingredients
- 2 tablespoons Tutto Sicilia Orange Blossom Honey (plus more for serving)
- 250g good ricotta or rich greek yogurt
- 200g mixed berries — strawberries halved, raspberries, blueberries
- 2 tablespoons granola or crushed amaretti (optional — adds texture)
- A pinch of orange zest
Instructions
- Toss the berries with 1 tablespoon of honey and the orange zest. Let sit for 5 minutes — they'll release some juice.
- In two glasses or small bowls, start with a layer of ricotta or greek yogurt.
- Spoon over some of the macerated berries and their juices.
- Add granola or crushed amaretti if using.
- Repeat layers. Finish with a spoonful of honey poured over the top.
- Cover and refrigerate overnight, or for at least 2 hours.
- Serve cold, directly from the fridge.
Nonna's Notes
She made this with whatever was in season and to use up berries that are not perfect.
In the morning — or after dinner, or both, no judgment — you pull it out and it's just there. Creamy, cold, fragrant with the honey that's seeped through everything. The berries have softened into a kind of loose compote. The ricotta is still cool and clean against it.
It takes ten minutes to put together. It looks and tastes like someone who knows what they're doing made it.
You do.
The orange blossom honey is what makes this feel like Sicily rather than just a parfait. Make it tonight. It'll be waiting in the morning.
