This is the version that lives on every table before dinner starts — fragrant with garlic and herbs, sharp with balsamic, warm from the bowl. Set it out with crusty bread and watch it disappear before anyone even sits down.

Ingredients
- ½ cup Tutto Sicilia Extra Virgin Olive Oil
- 2 tsp of dried or fresh oregano, thyme and rosemary
- 2 tsp garlic, minced
- 1 tsp fresh Italian parsley, chopped
- ½–1 tsp red pepper flakes
- Salt and freshly ground pepper
- 1–2 tbsp quality balsamic vinegar
Instructions
- Pour the olive oil into a wide, shallow serving bowl. Add the Italian seasoning, garlic, parsley, red pepper flakes, and a generous amount of salt and pepper. Finish with the balsamic vinegar. Serve immediately with crusty bread.
Nonna's Notes
Use a balsamic with some age on it — the sweetness matters here. And don't skimp on the pepper.
