Sunday morning. No rush. This is the whole feeling.
I am not a person who moves quickly before coffee. I am also not a person who wants to stand over a stove for forty minutes when I'm still half asleep. These eggs exist in that middle space — slow enough to be intentional, fast enough to still be breakfast.
Because we are cooking our eggs with the hot pepper cream, its character is kept pure — that deep, olive-oil-preserved chili warmth that wakes everything up without overwhelming it. It reminds me of my son adding Tabasco to his eggs, but so much better.

Ingredients
- 1 teaspoon Tutto Sicilia Hot Pepper Cream
- 4 eggs
- 2 tablespoons Tutto Sicilia Extra Virgin Olive Oil
- Flaky sea salt
- Good bread, toasted
- Anything to finish — fresh herbs (whatever you have on hand — chives, flat leaf parsley, basil) or seeds, such as sesame seeds. A sprinkling of crumbled ricotta salata, a sliced avocado — whatever makes your morning sing.
Instructions
- Add olive oil to a heavy-bottomed pan over the lowest heat you have.
- Add a small spoonful of hot pepper cream. Stir slowly and continuously with a spoon.
- Crack the eggs into a bowl and whisk gently for scrambled or right into the pan for a fried egg. Season with salt.
- You may want to turn the heat up a bit, but don't rush the eggs. Cooking slowly is the whole point for both scrambled or fried.
- Remove from the heat while they still look slightly underdone. They'll finish cooking in the pan.
- Serve with toast immediately, with a bit more flaky salt.
Nonna's Notes
Check the fridge before you start. The parsley that's almost done, the chives nobody finished, the last bit of cheese or the lone avocado that is almost past it's point — they belong here. Nonna did not let anything go to waste.
This is also the recipe that made me realize hot pepper cream isn't just a pasta thing. It's an everything thing. Eggs, especially. Low and slow, a little heat, good bread on the side. If you love heat, this wont be too spicy. If you're unsure, add a little and then add some more.
Sunday is the right day for this. But so is any day with no particular reason to rush. One small spoonful of hot pepper cream does more for a plate of eggs than anything else in your pantry will. It's not a garnish. It's what changes the whole mood of your morning.
