At the Table — Spread generously on good bread with a crumble of ricotta salata and a little citrus zest over the top.In the Kitchen — Stir a spoonful into the olive oil when making bread salad — it pulls the whole thing together.On Everything — Blend with sour cream, a little oregano, garlic and olive oil for an impromptu capuliato dip with whatever is on the table.Nonna's Way — A small spoonful tucked into a sauce, folded into a ragù, stirred into pasta at the last moment. Sometimes you just have to feel it.

From the garden — Sicilian San Marzano tomatoes, sun-dried at peak season, then blended with extra virgin olive oil, basil, garlic, parsley and a splash of wine vinegar. Everything the summer had to offer, preserved in a jar.

Bright at first. Then the layers arrive — sweet tomato, warm garlic, a thread of vinegar that keeps everything alive. This is what a tomato tastes like when the sun has done all the work.

Stir into pasta, spread on a panino, spoon onto pizza before it goes in the oven. Try it on grilled eggplant, fold it into a vinaigrette, or use it as the base of a sauce that tastes like it simmered all afternoon. It didn't. That's the whole secret.
